Flavour
The flavour profile is complex and layered, starting with sweet notes of raisins and blackberries. These fruity flavours are complemented by the rich, velvety taste of dark chocolate, which adds depth and sophistication. The blueberry notes are prominent but balanced, providing a fresh and fruity contrast to the deeper chocolate flavours. The brandy notes add a subtle complexity, suggesting a hint of aged spirits without overpowering the other flavours.

Overall Profile
This coffee is clean, uniform, and balanced, with each sip offering a harmonious blend of flavours. The combination of prune, raisins, blackberry, chocolate, and blueberry notes creates a versatile coffee that is equally enjoyable whether brewed as a filter coffee or pulled as an espresso. The medium acidity and juicy body make it a delight to drink, whether you prefer the nuanced flavours of a filter brew or the concentrated intensity of an espresso.

Farm Description

Nestled in the heart of Colombia’s coffee-growing region, this family coffee farm is a testament to dedication, innovation, and a deep passion for specialty coffee. The journey began in 2020 when Milena, driven by her curiosity and enthusiasm, started watching fermentation tutorials on YouTube. Inspired by these videos, she decided to conduct some experiments on their farm, marking the beginning of a new era in their coffee production.

Milena’s experiments with fermentation techniques were the catalyst for the family’s shift towards producing specialty coffees. Her meticulous approach and willingness to innovate led to significant improvements in the quality and distinctiveness of their coffee. Around the same time, Victor introduced the idea of producing small batches to showcase their coffee in various competitions and auctions. This strategic move not only helped in refining their craft but also brought their coffee to a wider audience.

The hard work and dedication of this coffee family have started to bear fruit. Their coffees have begun to gain recognition, earning top 10 spots in several prestigious competitions and auctions, including “The Best of Cauca,” “Colombia Land and Diversity,” and others. These accolades are a testament to the family’s commitment to quality and their innovative approaches to coffee production.

The farm, spanning 5 hectares, is a pristine example of sustainable and biodiverse farming practices. Alongside the coffee trees, the farm is home to a variety of other trees and plants, including Guamo, cascarilla, mango, heliconea, and guava. This diverse ecosystem not only enhances the flavor profiles of their coffee but also contributes to the overall health of the soil and the environment. The presence of water births on the farm ensures a natural and sustainable water supply, further underscoring the family’s commitment to environmental stewardship.

The family’s approach to coffee production is deeply rooted in sustainable practices. They employ shade-grown coffee methods, where coffee trees are cultivated under the canopy of larger trees. This technique helps in maintaining soil health, reducing the need for chemical fertilizers, and creating a habitat for a variety of wildlife. The farm’s diverse plant species attract birds and other animals, contributing to a healthier and more biodiverse ecosystem.
